Grab your cleaver and try these fat-cutting tips from the editors at Eating Well.

Use citrus fruit juice, apricot nectar, or cranberry juice to replace or extend oil in home-made salad dressings. Or try cutting the oil with a mellow vinegar such as balsamic vinegar or raspberry vinegar.

Add 1 cup of soaked bulgur to one-half pound of ground beef or sausage. Replacing half the meat with bulgur substantially reduces fat while increasing complex carbohydrates. 

Try mushrooms in place of meat in a sandwich or in tomato sauce. Portobello and cremini mushrooms have a rich, meaty taste that can be just as satisfying.

Substitute yogurt cheese for cream cheese and sour cream. Yogurt cheese is easily made by draining the whey from non-fat plain yogurt. Final yield is about one-third of the original volume.

Try prune puree, apple butter, or mashed bananas to replace 25% of the fat in cakes, cookies, and muffins.

Replace one ounce of unsweetened chocolate with three tablespoons of cocoa. The cocoa has only 1.5 grams of fat compared to 16 grams in the chocolate.

Dip chicken or turkey fingers in buttermilk batter, roll in seasoned flour or cornmeal, and faux-fry in a hot oven.

KFC Cole Slaw
1 cup fat free Miracle Whip
1/4 cup sugar
8 cups shredded cabbage
1/4 cup shredded carrot
1 Tbs. minced onion

Combine Miracle Whip and sugar in a large bowl. Mix well with electric beater until sugar is dissolved. Add remaining ingredients. Cover and chill for at least 2 hours before serving.
